As part of a wider commercial strategy to be rolled out, T&B Consulting developed a food & beverage vision for the London Coliseum that could elevate the visitor experience while attracting star culinary names. The brief was to ensure F&B played a more central role in the theatre’s commercial mix, transforming underused spaces into destinations.
We provided hands-on support to the organisation’s leadership, helping build internal understanding of how F&B can drive revenue, align with brand, and deepen audience loyalty.
From service models to operator positioning, we laid the groundwork for a hospitality offer ready to compete with London’s top cultural venues.

T&B Consulting partnered with Boo•Kay, the flower brand founded by Broadway star Robbie Fairchild, to create a retail experience inside the London Coliseum during My Fair Lady’s run at ENO. Steeped in performance and artistry, Boo•Kay offered a fresh take on interactive theatre retail- part installation, part boutique flower shop.
We managed the integration from concept to execution, introducing a U.S. brand into a heritage London venue while maintaining theatrical and operational flow. The pop-up generated press coverage and strong audience engagement, opening new conversations around how retail can enhance and extend the theatrical experience beyond the stage.
